I am looking at a Hanse 375 and will likely be sailing single handed on occasions, how easy is it to run the main sheet from the coach roof to the helm position to allow control of the mainsheet when helming?

No problem at all. Do it all the time.
Selftacker on one side and main sheet on the other. The sheet is barely in the way for those sitting there.

I have no guide. It touches the winches on the roof, but not much.

Eeehhh...
I just studied i 375 yesterday. It is much more different from a 370 than I thought. It seems wider by the wheels and perhaps the rear winch is placed wider out than on a 370.
