This is only possible on rectangular boards. Imho the brown underside looks ugly

I think you will find even the rectangular ones are cut to fit one way only.  Very few straight lines in a boat.  You'd probably be better off cutting a new set with some different wood .. or put down carpet or something.

Carpet!  Sailing is a form of damp camping!  You could be ending up with a source of constant smell from mildew, or and I apologise for my lack of knowledge of your area, ice crystals forming.

With the 470 some of the straightforward panels are capable of being turned round 180 degrees, about four in total as the remainder have seating, cut specifically or the table fitted on top. Can you get them professionally laminated?

Hanse do carpet sets for some of their models.  I agree and have the plain boards myself.  But there are other things you can put down rather than recutting the floor boards. That was my point.
