Hello

I'm quite dissapointed when sailing in "strong" winds

M'Enfin is a 2004  - 312
New sails in 2021 hand made (not Chinese or similar)
Main : Forced full batten, Challenge Performance Dacron 8.11OZ, cross cut, 3 reefs, Rutgerson sliders and batcars, 
Jib : same cloth , tri radial, two vertical battens
Rig replaced in 2018
Barton mainsail rail + 

Here are my sails fittings close to the wind VS the TWS

0 > 15 : full main + jib
15 - 17/18 : 1 reef + jib 
18 - 20/22 : 2 reefs + jib, but she becomes very nervous
20 - 25 : 2 reefs - 1/2 jib
> 25: 3 reefs

Over 25, I start to pray
And wonder what would happen in a small storm

How do you sail?

My set is this:
Full batten mainsail (2 reefs) - st jib
0 > 18 : full main + jib
18 - 20/22 : 1 reefs + jib
20 - 25 : 2 reefs - 1 jib
> 25: jib only ...and broad reach

I got a 312 fro 04 

Elvstrøm EPEX sails 3 reef and a jib , 

1 around 20 kts  
2 around 25 
3 around 30 

 i must say  i use   my travller  and out haul and cumming a lot   and also  the trim on my jib is very importen .  try to play around whit the  halyard tension  . 

when my family streps onboard  the its another story   ,  the we trey not to go upwind in more than 18 kts of wind

I also play with the traveler and the backstay

How do you trim your Jib

I must admit I'm quite lazy and always let the sheet on the middle hole of the plate

Mine is a 2003 version of the 311. & I sail SH. I have a laminate ST &  a fibrecon Main.
We are talking up wind here.
I would ask if the OP has much weather helm? That gives some indication of sail & rig set being the issue
I do not find that I need to go to 3rd reef at 30 But it depends on the gusts. Some days it is steady & more predictable.
I sail the S North sea & if it is a short chop I reef earlier. If it is flat I can hold full sail for longer than the above if I play the main a bit.
Same comment goes with family
 I found that rig tension ( My uppers are 24%+), mast rake sail shape & tension of controls makes a big difference. Backstay tension comes in to play on full main ( I have 32:1)
I do not sail with boom in hard because one does not have to with an ST. I have a traveller & i have a fine tune on the end of the mainsheet so I can adjust it easily & quickly whilst helming or under control of the Aeries.
I do not recall ever sailing with a furled dacron ST although my laminate ST might need furling as it is more powerful. Not had to do that yet though

On my 312 / 2005 in north tyrrenian - Liguria/cote d'azur/Corsica/Sardegna
I have a mainsail track that help much to control mainsail when the wind increase.
My sails set is this:
Full batten mainsail (2 reefs) - st jib - genoa 120 - genoa 140 - gennaker
0 > 12 : full main + 140 for local race or 120 when cruising - gennaker
15 - 20 : 1 reefs + jib or 120 partially furled (better change it with jib)
20 - 30 : 2 reefs - jib
> 30: jib only if possible going downwind or not close to the wind more than 90° - better stay in the harbour waiting less wind SmileSmile

As a new 312 owner I have been reading these reefing comments with interest. I was out in The Solent this weekend with 17/20kt winds on gusting 25/27kts. Only my third outing on the boat. Left the marina in Chichester Harbour  with two reefs in place. We sailed on a broad reach to Lymington. The boat handled superbly - zero stress on tiller - perfectly balanced - I was very impressed. Mainsheet fitted centrally - no traveller ( yet ) on Isotope - Considering for the future. Self tacking jib worked well - needing the occasional tweak.
Return journey a series of tacks against the wind again two reefs in place, eventually shaken out as winds eased. Again the boat behaved superbly. Very easy system! Fast and easy tacking too! Looking forward to next outing.

I have a 355. When I sailed with ST I would reef main at 20 knots and never reefed the self tacker , could carry 1 reef in main and self tacker up to about 28knots , then 2nd reef in main. Have sailed 2 reef and full ST in sustained mid 30s with no issues.

Recently got a new 105% (Evolution Sails - NZ) instead of the ST. Totally different boat to sail! Loads more power and still learning the reefing ranges but upwind / reaching I now reef the main around 15 knots and need to furl reef 1 on the 105% at about 20knots or else have a lot of weather helm.

It's normal to have more weather helm adding a bigger headsail.
The global sail centre, main+headsail, go back and the boat has more weather helm.
